The ProcessThis lot undergoes a Mora Azul co-fermented washed process. A mother culture derived from Purple Caturra cherries is fermented for 190 hours with sugar, molasses, and concentrated blueberry juice to balance Brix and pH levels. After pulping, Caturra and Bourbon cherries ferment for 150 hours in sealed tanks with the cultured infusion. The coffee is then dried 2–3 days in direct sun, followed by 15–18 days under shaded canopies to preserve aromatics and ensure even moisture loss.
In the CupThe cup opens with juicy blueberry sweetness, layered with raspberry and cotton candy grape notes. A smooth milk chocolate undertone emerges, supported by a creamy body and bright acidity.
