This standout lot from Finca Monteblanco is a vibrant, fruit-forward Colombian coffee that combines innovative fermentation with precise craftsmanship. The Producer

Rodrigo Sánchez Valencia manages Finca Monteblanco with meticulous attention to detail. Known for pushing the boundaries of fermentation and flavor development, Rodrigo carefully monitors each step—from cherry selection to drying—ensuring that each lot showcases the unique potential of the Purple Caturra varietal.

The Process

This lot undergoes a Mora Azul co-fermented washed process. A mother culture derived from Purple Caturra cherries is fermented for 190 hours with sugar, molasses, and concentrated blueberry juice to balance Brix and pH levels. After pulping, Caturra and Bourbon cherries ferment for 150 hours in sealed tanks with the cultured infusion. The coffee is then dried 2–3 days in direct sun, followed by 15–18 days under shaded canopies to preserve aromatics and ensure even moisture loss.

In the Cup

The cup opens with juicy blueberry sweetness, layered with raspberry and cotton candy grape notes. A smooth milk chocolate undertone emerges, supported by a creamy body and bright acidity. The finish is clean, layered, and lingering, highlighting the precision and creativity behind this innovative lot.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.


What does 'Filter' or 'Espresso' Roast mean?

Typically filter is roasted lighter than espresso, though this is not always the case. Several factors play into what brands a Manhattan coffee as 'filter' or 'espresso', which includes the roast profile - i.e. how the beans are roasted, not just how developed a roast it is. It doesn't preclude you from using the beans for espresso though!
