Intro

This yeast-assisted semi-anaerobic natural from Gatta Farm is a striking example of how experimental fermentation can enhance the fruit-forward character of Ethiopian coffees. Silky in body with a subtle boozy nuance, it delivers an expressive, beautifully balanced cup that feels both complex and approachable.

The Producer

Gatta Farm, part of Daye Bensa, was originally a natural forest discovered by cofounder Mulugeta Dukamo in 2013. The farm has been carefully developed with sustainability and community impact in mind. Local residents are involved in planting, harvesting, and processing, with women focusing on quality control and fermentation. The farm also includes a drying station, lodge, and training facility, providing work opportunities and education for the community.

The Process

This lot is a yeast-assisted semi-anaerobic natural, designed to highlight fruit complexity and layered sweetness. Cherries are carefully harvested, fermented with locally cultivated yeast, and dried on raised beds, allowing the coffee’s tropical and stone fruit notes to fully develop while maintaining a silky body.

In the Cup

The cup opens with rich, stewed strawberry sweetness, complemented by juicy apricot and notes of brown sugar. A delicate, subtle boozy nuance adds depth without overpowering, while the smooth body and balanced acidity make this a coffee that is both expressive and easy to enjoy.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
