The Producer:
Buku Abel Washing Station sits in the lush, high‑altitude hills of Hambela in Ethiopia’s Guji Zone — a region famed for its distinctive and expressive natural coffees. With cool mountain winds and nutrient‑rich red soils at around 2,100 m elevation, this station provides an ideal environment for coffee cherries to mature slowly and develop complex flavour. DAK’s selection of this lot reflects a commitment to sourcing coffee with full traceability and outstanding fruit intensity.
The Process:
This lot is processed naturally, meaning cherries are dried whole after harvest, allowing prolonged contact between the bean and fruit sugars. Natural processing enhances sweetness and yields vibrant, juicy notes in the cup
The Cup:
In espresso form, Blue Lagoon offers a luscious and playful profile. Expect bright strawberry 🍓 acidity upfront, complemented by rich blueberry 🫐 sweetness and a pleasant citrus‑sweetness that evokes orange cake 🍊 on the finish. The natural processing gives the espresso a syrupy texture and fruit‑driven sweetness, making it both dynamic and dessert‑like.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
