Intro:

Tim Wendelboe is proud to present Tatmara, a beautifully clean washed Ethiopian coffee from Kaffa — the legendary birthplace of Arabica. Grown in native forest under biodiverse shade, this lot showcases the elegant and transparent profile that washed Ethiopian coffees are celebrated for: floral, citrusy, and softly fruity, with a refined and silky finish.

The Producer:

Negussie Tadesse owns and operates the Tatmara Coffee Plantation, located near Bonga in the Kaffa region. A former civil servant turned producer, Negussie is deeply committed to sustainable and forest‑friendly coffee cultivation. His farm preserves over 200 hectares of native forest, integrating coffee trees into this thriving natural ecosystem and eliminating the use of synthetic inputs. His philosophy is built around regeneration, biodiversity, and minimal intervention — all of which contribute to the complex cup quality of Tatmara.

The Process:

This coffee is fully washed, highlighting clarity and brightness. After handpicking ripe cherries, the fruit is depulped and fermented for 24–36 hours in clean tanks to break down mucilage, followed by a thorough washing. It is then dried slowly on raised beds, which helps to develop sweetness while retaining the delicate floral and citrus aromatics.

The Cup:

Tatmara is a light, refined filter coffee with classic washed Ethiopian character. Expect white floral 🌸 aromas, bright lemon citrus 🍋 acidity, and a gentle peach 🍑 sweetness that rounds out the mid-palate. Subtle tropical nuances ✨ flicker throughout, giving the cup depth and a whisper of complexity beneath its elegant surface.

Overall:

This is a bloody good standout washed Ethiopian coffee with both clarity and grace. Sourced from a forest‑grown farm in the heart of Kaffa, it captures everything that makes washed Ethiopians beloved: floral lift, citrus brightness, and silky structure. A beautiful daily filter coffee with a clear sense of place.

What does 'Filter' or 'Espresso' Roast mean?

Typically filter is roasted lighter than espresso, though this is not always the case. Several factors play into what brands a Manhattan coffee as 'filter' or 'espresso', which includes the roast profile - i.e. how the beans are roasted, not just how developed a roast it is. It doesn't preclude you from using the beans for espresso though!
