INTRO
Terraform Lot-5 is a special collaboration with ALO, a lactic natural with a slow-drying protocol. In the cup: yogurt, blueberry, and pineapple.
THE PRODUCER
This lot comes from ALO, grown at 2,450 masl, and was developed as a collaboration between Terraform and ALO. The sheet doesn't give further producer background.
THE PROCESS
Fully ripe cherries are floated, then sealed for fermentation in a 2% brine solution until the pH reaches around 4. During drying, the coffee is kept entirely out of sunlight and repeatedly turned on raised beds, with low-temperature resting in sealed GrainPro bags, continuing until it reaches the target moisture. The entire process takes about 28 days.
The brine-based lactic fermentation to around pH 4, followed by a sun-free 28-day slow dry, is the defining combination. It builds the yogurt-like lactic character alongside the blueberry and pineapple fruit.
THE CUP
Lactic and fruit-forward: a creamy yogurt character leads, with blueberry and pineapple sweetness.
Flavour Notes
🥛 Yogurt 🫐 Blueberry 🍍 Pineapple
