INTRO

Peru's Cedrobamba sector is one of the highest coffee-growing zones on earth, and Hugo Pareja's Finca Inka Rumi — perched between 2,300 and 2,500 metres — has earned the evocative nickname "Coffee on the Rocks" for its dramatic landscape of volcanic soil and massive rock formations.

The variety grown here — long known locally as Geisha Inca for its floral elegance — was recently confirmed by DNA analysis to be SL9, an ancient Ethiopian-origin variety closely related to the celebrated Kenyan Scott Labs selections. At these extreme altitudes, in Inka Rumi's fertile volcanic soil and indigenous tree shade, the SL9 produces a Peruvian expression of genuine rarity and beauty.

THE PRODUCER

Hugo Pareja is a visionary producer who has invested deeply in native tree planting and biodiversity restoration at Finca Inka Rumi, creating both an environmental legacy and the ideal growing conditions for exceptional coffee. The farm is positioned in one of the most remote and highest-altitude coffee zones in Peru, and Hugo's meticulous post-harvest approach reflects his commitment to quality at every stage.

The farm's extreme altitude — 2,300 to 2,500 metres — produces a slower cherry maturation, greater density in the green bean, and a clarity in the finished cup that few lowland coffees can match. The recent DNA confirmation of SL9 has added another dimension of rarity and provenance to this already exceptional lot.

THE PROCESS

The Washed process at Finca Inka Rumi involves:

• 🍒 Selective Harvest — Only fully ripe cherries hand-picked

• ✅ Floatation Sorting — Immature or damaged cherries removed by water floatation

• 🔧 Depulping — Cherries depulped and placed in clean fermentation tanks

• 🧪 Dry Honey Fermentation — 36-hour dry fermentation in the coffee's own mucilage, without added water — the cool mountain climate ensures stability and precision

• 💧 Full Wash — Coffee fully washed after fermentation to achieve a clean, bright profile

• ☀️ Drying — Dried on raised beds with careful monitoring

The dry honey fermentation reduces water usage significantly whilst developing natural sweetness and depth in the cup that a standard washed process alone would not achieve.

THE CUP

A coffee of genuine clarity and composed elegance. Bright citrus and white floral notes open the cup — jasmine, orange blossom — before the profile evolves through layered tropical fruit sweetness. The body is silky and refined, and the finish is long and gentle, with panela's unrefined sugar warmth providing a grounding sweetness that brings everything into perfect harmony.
