Orange Sunset — a naturally processed Colombian decaf from Jairo Arcila, delivering a warm, fruited, and spiced cup that makes no concessions to its decaf status. Jairo Arcila is one of Colombia's most celebrated and widely referenced specialty coffee producers — a name that has become synonymous with quality, consistency, and innovation across both conventional and experimental processing. From his farms in the coffee-growing regions of Colombia, Jairo produces an exceptional range of lots spanning natural, washed, and co-fermented processing styles, consistently delivering high-quality results that have established his coffees as staples on specialty café menus worldwide.

This decaf lot comes from Castillo-cultivated plants at 1,450–1,600 MASL — Castillo being a Cenicafé-developed hybrid of Caturra and the Timor Hybrid, bred for disease resistance and reliable quality. The natural processing builds the orange and guava tropical sweetness, while the decaffeination method preserves the aromatic complexity and chai spice warmth that make this cup so distinctive.

THE PROCESS

The Natural Decaffeination process involves:

🍒 Hand-picking — Castillo cherries selectively harvested at peak ripeness ☀️ Natural drying — Cherries dried whole-fruit to build tropical fruit sweetness and aromatic depth 🌿 Decaffeination — Caffeine removed post-processing using a naturally derived method that preserves the coffee's aromatic complexity, sweetness, and flavour integrity

The natural drying is the defining step — by leaving the cherry intact throughout the drying period, the process builds the orange and guava tropical character that define this lot, while the subsequent decaffeination preserves those hard-won aromatic compounds with the chai spice warmth intact.
