INTRO This lot was grown by Deguna D., an And Coffee partner near the Oli-Shantawene washing station in Sidama. Syrupy blackberry and tart hibiscus lead, followed by a really lovely red grape tone as the cup cools. In the cup: blackberry, hibiscus, and red grape.
THE PRODUCER Oli-Shantawene washing station sits at 2,300 masl, named after Oliver, the founder of And Coffee's firstborn son. The station purchases cherry from surrounding farmers and follows a meticulous hand-sorting protocol paired with slow, shaded drying to ensure cleaner flavours. This particular lot was grown by Deguna D., an And Coffee partner near the station.
THE PROCESS After hand sorting, the coffee was dried on raised, shaded beds for 25–30 days.
The meticulous hand-sorting protocol combined with slow, shaded drying is the defining step here — it's what produces the syrupy blackberry and hibiscus character, while keeping the cup clean enough for the red grape tone to shine through as it cools.
