DETAILS

  • Producers: Alan & Diana Hartmann
  • Farm: Rocky Mountain Farm
  • Region: Santa Clara, Chiriquí, Panama
  • Varietal: Gesha
  • Process: Reverse Protocol
  • Altitude: 1,400–1,600 masl

INTRO Part of the Hachi Project's international collaborative operation — "Keika" means "blessed fruit," and it rings true here. This expertly processed Reverse Protocol Gesha is highly expressive, bright, and aromatically complex. Incredibly loud jasmine green tea notes lead, complemented by a finger lime acidity and layers of bergamot. In the cup: jasmine green tea, finger lime, and bergamot.

THE PRODUCER Rocky Mountain Farm sits in Santa Clara, Chiriquí, between 1,400 and 1,600 masl, managed by third- and fourth-generation farmers Alan and Diana Hartmann. The farm's rich, biodiverse climate and agroforestry techniques help maintain its volcanic soil, acting as a centralized point for the broader Hachi Project — a model for scalable, sustainable farming that consistently produces high quality year over year.

THE PROCESS Reverse Protocol begins with whole cherries undergoing a controlled submerged fermentation before depulping and washing. The intact fruit is placed in a calibrated culture medium with selected enzymes and yeast, allowing structured development during a precisely timed 24-hour phase. Once the desired profile is reached, the cherries are depulped and washed to halt fermentation before drying under controlled conditions in a dark room.

The precisely timed, calibrated culture medium fermentation is the defining step — it's designed to capture the benefits of whole-cherry fermentation without excessive intensity, refining and highlighting Gesha's cleaner aspects rather than adding ferment-driven flavours. This coffee cracked quite early and landed at one of the lightest production roasts on record, letting that delicate processing shine through fully.

THE CUP Bright and aromatically complex — incredibly loud jasmine green tea notes lead, with a finger lime acidity and layers of bergamot, magnolia, and hibiscus. Refined and clean, capturing Gesha's most delicate, expressive qualities.

About this variety

Coffees reported as Gesha or Geisha are often prized for a delicate, tea-like cup with lifted floral aromas and bright fruit. Jasmine, bergamot and peach are common reference points, but each lot can express them differently.

Why this one is different
  • Panama
  • Chiriquí
  • 1400-1600 masl
  • Other

Panamanian Geisha, especially well-traced T2722 grown at high altitude, is the classic reference for a very delicate, jasmine-led and peach-like cup.

The Other process is another major influence on aroma, sweetness, acidity and body.

Why the Gesha / Geisha name matters

Gesha and Geisha are interchangeable spellings, not proof of different varieties. The best-documented Panamanian Geisha descends from Ethiopian material recorded as T2722, while other coffees carrying either spelling may not be genetically identical.

Classification Reported Gesha / Geisha

Technical lineage The reported name alone does not establish one genetic lineage. Confirmed Panamanian T2722 traces to Ethiopian landrace material.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
