INTRO The cleanest of three coffees sourced from importer And Specialty Coffee — produced with cherry purchased from surrounding farmers at 2,300 masl in Ako, Sidama. THE PRODUCER This lot is produced with cherry purchased from neighbouring farmers delivering to the Ako-Sonicho station in Sidama, at 2,300 masl. Cherry is composed of the JARC-selected varietals 74158 and 74112, processed traditionally with careful hand sorting before drying.
THE PROCESS This lot is a Natural — cherries are hand-sorted, then dried whole on raised beds for 25–30 days.
The high 2,300 masl altitude combined with careful hand sorting is the defining factor here — it's what produces such an unusually clean natural, with orange blossom, jasmine, and bergamot florality layered over bright tropical fruit and apricot preserves sweetness.
THE CUP Beautifully floral and clean — orange blossom, jasmine, and bergamot lead, with bright tropicality underneath and a sweet apricot preserves note running throughout, along with a mango-like depth.
