INTRO

This is the final harvest pass of the season from Wilson Alba — an end-of-season lot from one of southern Huila's most celebrated Pink Bourbon producers. Wilson's work with this remarkable variety continues to inspire, and each opportunity to taste his coffee reaffirms just how special his approach is. In the cup: berry compote, lemon zest, and hibiscus.


THE PRODUCER

For over 15 years, Wilson Alba has lived and worked alongside his brother Jose on their farm, Sierra Morena. Spanning eight hectares — approximately 20 acres — the farm includes two hectares planted with Pink Bourbon, with the remainder in Tabi. Sierra Morena consistently produces some of the finest Pink Bourbon SEY sources from southern Huila, and it is an honour to roast and share their exceptional coffees.

The Alba family's commitment to selective harvesting and careful post-harvest processing is evident in every cup. Each pass through the farm results in a distinct expression, and this end-of-season lot captures the lingering complexity of a long, carefully managed harvest.


THE PROCESS

The Washed process at Sierra Morena involves:

  • 🍒 Hand-picking — Cherries selected at peak ripeness
  • 💧 Floating — Immersed to remove defective or under-ripe cherries
  • 🔧 De-pulping — Fruit skin removed on the day of harvest
  • 🧪 Dry fermentation — Fermented for 24 hours without added water
  • ☀️ Raised-bed drying — Dried for 30 days until moisture content reaches 10.3%

The extended drying period at Sierra Morena allows full development of Pink Bourbon's characteristic floral brightness and fruit-forward complexity, resulting in a structured yet vibrant cup.


THE CUP

An end-of-season Pink Bourbon brimming with fruit intensity — rich berry compote gives way to bright lemon zest acidity and a lingering hibiscus florality. Elegantly structured and deeply expressive of Huila's exceptional terroir.
