INTRO
Jhon Alexander Bermudez's Chiroso continues to show one of the most unique profiles SEY have found in Colombia — reminiscent of coffees from Uraga, Ethiopia, yet unmistakably its own. In the cup: ripe pineapple, very bright acidity, and hops.
THE PRODUCER
Jhon Alexander Bermudez farms Finca La Estrella in Urrao alongside his wife and their two young daughters. Urrao has long been one of Colombia's most exciting and underrepresented coffee-growing regions — remote and historically challenging to work in, but offering extraordinary potential through its extreme elevations and the rare Ethiopian variety known colloquially as Chiroso. SEY have spent years developing a buying programme in Urrao and are beginning to see that work take shape.
At 1,930 MASL, Finca La Estrella sits at an altitude that slows cherry development and concentrates the sugars and aromatics that make Chiroso so compelling. The Bermudez family's dedication to their farm is evident in every cup — a coffee that rewards attention with extraordinary complexity.
THE PROCESS
The Washed process at Finca La Estrella involves:
- 🍒 Hand-picking — Cherries selected at peak ripeness
- 💧 Floating — Immersion to remove defects before pulping
- 🔧 De-pulping — Skin removed on the day of harvest
- 🧪 Underwater fermentation — Fermented submerged for eight days
- 💧 Washing — Thoroughly washed to remove fermentation by-products
- ☀️ Raised-bed drying — Dried until moisture content reaches 10.5%
The extended eight-day underwater fermentation is the defining step here — a slow, controlled process that builds the remarkable complexity and vivid brightness that sets this Chiroso apart.
