INTRO SEY's continued partnership with Esayas Beriso, one of the few single-producer separations they get from the Guji Highlands — and the quality remains exceptional season after season. THE PRODUCER Buku Sayisa is one of the highest-elevation coffee-growing regions in Ethiopia, with farm plots scattered throughout the highlands, reaching up to 2,350 masl — creating optimal conditions for exceptional cup quality. Esayas Beriso began his career in a government office in Dimtu, where he and his brothers started a small side operation collecting and selling farmers' cherry to local wet mills. As the operation grew, Esayas planted his own trees, and in 2009 left his government position to become a full-time coffee business owner. Today it's a family operation, with his wife Meskerem managing harvesting on their personal farm and buying cherry from neighbouring farms.

Ethiopian Landrace refers to the country's vast pool of indigenous varieties — DNA testing has confirmed over 60 distinct types, giving Ethiopia the most coffee biodiversity of any producing country. Given the structure of the Ethiopian coffee trade, single-variety lots remain rare; most coffees, including this one, are naturally occurring blends of these landrace varieties.

THE PROCESS The Washed process for this lot involves:

🍒 Hand-picking & sorting — cherries hand-picked at peak ripeness and hand-sorted 🌱 De-pulping — cherries de-pulped shortly after harvest ⏱️ Extended wet fermentation — fermented for up to 72 hours 🚿 Channel washing & density grading — washed in channels, then graded by density, with lower-density seeds removed to retain only the highest-quality lots 💧 Post-fermentation soak — soaked for two hours after fermentation ☀️ Thin-layer drying — dried in 2cm layers for ten days, then hand-sorted one final time

The up-to-72-hour wet fermentation combined with strict density grading is the defining step — it's what isolates only the highest-quality seeds, building the clean peach ring sweetness and raspberry brightness that define this cup.
