INTRO A welcome new addition to the Chiroso project in Urrao — Diana took over managing her father's small farm in 2011, and this season's results speak for themselves. What's starting to be called the traditional Chiroso profile is on full display here: tropical fruit, very bright acidity, and a touch of florality. THE PRODUCER Finca La Esperanza is a new addition to the Urrao buying project this year. Diana took over this small, two-hectare farm from her father in 2011 and, alongside her brothers, has transitioned it from lower-quality varieties to producing Chiroso specifically for the specialty market.
Chiroso is a new variety being grown primarily in Antioquia, Colombia, only recently gaining attention for its cup quality potential and beginning to spread. It's been genetically identified as an Ethiopian Landrace, though its precise path to cultivation in this region remains unknown — part of an ongoing project developed in partnership with exporter The Coffee Quest.
THE PROCESS The Washed process at La Esperanza involves:
🍒 Hand-picking — cherries harvested at peak ripeness 💧 Floating — floated to further remove defects 🌙 In-cherry rest — held in-cherry for 24 hours 🌱 De-pulping — cherries de-pulped after the rest ⏱️ Underwater fermentation — fermented underwater for 2 to 3 days 🚿 Washing — washed clean after fermentation ☀️ Drying — dried until moisture content reaches 10.5%
THE CUP Bright and traditional — tropical fruit sweetness up front, very bright acidity running throughout, with a touch of florality. A strong first showing from a promising new addition to the Urrao project.
