This is September Coffee's fifth time featuring José Martinez of Finca El Casino — a testament to the enduring quality this Huila producer delivers with his Pink Bourbon year after year. Floral, delicate, and beautifully clean, this washed lot is a textbook expression of what high-altitude Palestina Pink Bourbon can achieve. A light body and sweet honeysuckle finish make it one of the most effortlessly drinkable coffees in September's current line-up.

THE PRODUCER

José Martinez and his wife, Francy Helena Inga, manage 10 hectares at Finca El Casino in Sinaí, Palestina, Huila. Five of those hectares are planted with a range of varieties including Caturra, Pink Bourbon, Gesha, and Tabi. José grew up in a coffee farming family but spent years travelling Colombia as a bus driver before returning to his roots and purchasing El Casino. Today, he and Francy are known as much for their care for abandoned dogs — having given homes to dozens over the years — as for their exceptional coffees.

José's approach in the field is meticulous. From the careful tending of his trees through to the final stages of drying, every step is considered. His washed Pink Bourbons are consistently among the clearest, most expressive lots from the region.

THE PROCESS

The Washed process at Finca El Casino involves:

• 🍒 Selective Picking — Cherries hand-picked at peak ripeness
• ✅ Flotation — Floated to remove any outlier or defect cherries
• 📅 Dry Fermentation — 30-hour dry fermentation in cherry
• 💧 Traditional Washed — Conventional wet-process washing
• ☀️ Parchment Drying — Dried on raised beds until stable

José's exacting attention at each stage produces a clean, transparent washed coffee where the Pink Bourbon variety's natural florality and brightness are allowed to shine without interference.
