From Felipe Estela at El Robele in North Cajamarca — the uncle of David Flores, a producer September Coffee have featured previously, and a founding member of the El Morito cooperative. THE PRODUCER
Felipe Estela is a second-generation coffee producer and one of the founding members of El Morito — a coffee cooperative of family farms spread across the North Cajamarca region. El Morito began as a multigenerational family project before being formalised as an association in 2022. David Flores, Felipe's nephew, serves as the cooperative's current General Manager; Felipe himself manages El Morito's storage warehouses and is known throughout the organisation for his reliability, vision, and the consistency of what he produces at El Robele.
At 2,000–2,100 MASL in North Cajamarca, El Robele sits at an altitude where cool temperatures and slow cherry maturation build the clean sweetness and structured clarity that define this lot. Caturra — a natural Bourbon mutation first identified in Brazil — has been grown in Peru's highland regions for decades, and in Felipe's hands at elevation it delivers exactly the kind of balanced, transparent, and sweetly expressive profile that makes it such a rewarding variety to work with.
THE PROCESS
The Washed process at El Robele involves:
🍒 Hand-picking — Ripe Caturra cherries selectively harvested at El Robele 🔍 Sorting — Cherries sorted after picking to ensure only the finest proceed 🔧 Depulping — Outer skin removed before fermentation 🧪 Fermentation — Beans fermented to break down remaining mucilage 💧 Washing — Thoroughly washed to remove all fermentation residue ☀️ Drying — Dried to optimal moisture content
