INTRO
September's first harvest featuring a coffee from Faver Ninco and his family — a loud, defined Pink Bourbon with the bright, sweet acidity the variety has become known for, reminding us of pink lemonade with a pronounced floral finish. In the cup: pink lemonade, fresh raspberries, and white florals.
THE PRODUCER
Faver's coffee journey began about 25 years ago, learning everything he knows from his father and neighbours. About six years ago, he became deeply interested in coffee varieties and specialty coffee. His four children have since joined the process, each owning their own coffee plants and carefully selecting the varieties they want to grow, contributing to the family's economy and their own.
THE PROCESS
Hand-picked, perfectly ripe cherries are fermented for 24-30 hours. The pulp is then removed and a second anaerobic fermentation lasting 60-80 hours follows. The coffee is washed once, leaving a thin layer of mucilage to enhance body and fruitiness.
The extended second anaerobic fermentation, combined with a thin mucilage layer left on after washing, is the defining step — it's what builds the loud pink lemonade sweetness and raspberry brightness that define this cup, while adding body.
THE CUP
Loud and defined — sweet pink lemonade and fresh raspberries lead, with delicate white florals throughout. A beautiful citric acidity, light body, and a floral finish.
