INTRO

Now in their third year working with La Colmena, Prolog have built a genuine partnership with Jorge and the Gocta Group — a family-driven project founded by his sister Sonia, whose ambition and precision in the field have made this one of Prolog's most trusted Peruvian relationships. This partnership reflects a shared commitment to quality, transparency, and continuous improvement.

La Colmena integrates beekeeping into the farm's landscape, supporting biodiversity and contributing — according to Prolog's notes — to cup quality. Grown in a forest-rich environment with access to clean water, the farm's raised-bed drying and careful water use underpin a sustainability-minded approach that runs throughout the operation.

THE PRODUCER

Jorge is part of the ambitious Gocta Group, a family project founded by his sister Sonia. His precise and methodical approach to processing — including a double fermentation protocol and slow drying on raised beds — produces coffees with refined, consistent cup profiles that have earned Prolog's trust across three consecutive harvests. The project continues to develop, with plans to trial varieties such as Geisha in the future.

Prolog's roastery team — Mikołaj and Federico — visited the farm in Peru and came away deeply impressed by Jorge's commitment to quality at every stage. The farm works with cooperative-led practices around soil health and responsible land management, reinforcing the long-term thinking that defines this partnership.

THE PROCESS

The Washed process at La Colmena involves:

  • 🍒 Selective Harvest — Ripe cherries hand-picked at peak maturity
  • 🔧 Depulping — Mechanical removal of the cherry skin
  • 🧪 Double Fermentation — A two-stage fermentation protocol for added complexity and consistency
  • 💧 Washing — Fully washed to remove mucilage and ensure cup clarity
  • ☀️ Raised-Bed Drying — Slow, carefully managed drying that preserves delicate aromatics

The double fermentation and extended raised-bed drying are the hallmarks of Jorge's approach, and they show in the cup: refined, consistent, and clearly the product of careful hands.

THE CUP

Smooth and satisfying, La Colmena leads with a comforting milk chocolate sweetness backed by ripe apricot. The double fermentation adds a subtle complexity that rewards attentive tasting, whilst the clean washed process keeps everything precise and accessible. A beautifully balanced Peruvian cup.
