THE PROCESS

The Honey process at Volcancito involves:

• 🍒 Selective Harvest — Ripe Caturra cherries are selectively hand-picked at peak maturity.
• 🔧 Depulping — Cherries are depulped, removing the outer skin whilst retaining the sticky mucilage layer.
• ☀️ Mucilage Drying — Beans are dried with the mucilage intact, allowing sugars to concentrate into the bean.
• 📅 Patient Drying — Slow drying on patios and raised beds preserves the honeyed character.
