INTRO From Alejo Castro's Volcán Azul farm in Costa Rica — a zesty, fruit-forward Rume Sudan anchored by comforting cocoa tones. Lemon rind brightness opens the cup, giving way to date-like depth and a smooth milk chocolate finish. In the cup: lemon rind, date, and milk chocolate.

THE PRODUCER This lot comes from Alejo Castro's Volcán Azul farm in Costa Rica, growing Rume Sudan — a distinctive Ethiopian-origin variety valued for its structure and depth when processed with care.

THE PROCESS This lot is processed as a Yellow Honey, with cherries pulped and dried with a portion of mucilage intact, followed by 25 days of slow, even drying on raised beds.

The slow 25-day drying is the defining step — it's what builds the structure and layered sweetness behind the lemon rind, date, and milk chocolate character that define this cup.

THE CUP Zesty and comforting — lemon rind brightness opens the cup, giving way to date-like depth and a smooth milk chocolate finish. The honey process and slow drying give it a layered, tactile texture throughout.

About this variety

Sudan Rume is often intensely aromatic, with a floral lift, vivid acidity and tropical or red-fruit sweetness. Roaster tasting notes across the reviewed coffees include cherry, bergamot, papaya, lychee, pineapple, honey and vanilla. Processing can move it from delicate and tea-like to fuller and more fruit-driven.

Why this one is different
  • Costa Rica
  • 1800 masl
  • Honey

Honey or pulped-natural processing often adds roundness and sweetness while keeping some of the fruit definition of a washed coffee.

The listed growing altitude of 1800 masl is another reason this coffee may differ from the same variety grown elsewhere.

A little background

Sudan Rume is associated with the Boma highlands near the modern border region of South Sudan and Ethiopia. It is uncommon as a separated commercial coffee because yields are low, but its distinctive plant material has also attracted interest in breeding programmes. Farm traceability remains important because the variety is rare and public descriptions are not completely consistent.

Identification note Sudan Rume is an uncommon historic variety and public sources differ in how they describe its precise lineage and original geography. This profile preserves the supplied name without claiming a settled pedigree.

Classification Historic East African landrace

Technical lineage Historic East African landrace material; the precise lineage is not presented as settled.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
