INTRO
A delightful and classic expression of Pacamara from POMA's coffee research station in Denmark, showing the fragility and delicacy characteristic of the variety. Fine aromas of orange blossom and dried apricots, with a refined balance between floral bitterness and fruity sweetness. In the cup: orange blossom and dried apricot.
THE PRODUCER
POMA's Coffee Research Station was established eight years ago in a climate-controlled greenhouse in Fyn, Denmark. Inside it, environmental factors are manipulated using algorithms that mimic plant processes, letting the team study how coffee trees react to climate change while keeping a stable environment for investigating the impact of farming practices.
THE PROCESS
The cherries first spent 48 hours in cold storage at 8°C. This gentle chilling preserves and intensifies the coffee's aromas without inducing fermentation, safeguarding its natural taste profile. The cherries were then depulped, thoroughly washed, and dried at low temperatures in a pressurised, rotating tumble dryer, an even drying that gives a clean, crisp finished product.
The 48-hour cold rest at 8°C, with no fermentation, is the defining step. It's what intensifies the delicate aromatics and keeps the cup clean.
THE CUP
Delicate and aromatic: orange blossom and dried apricot lead, in a refined balance between floral bitterness and fruity sweetness.
