INTRO
A recent harvest from the legendary Jaramillo farm, the part of the Hacienda La Esmeralda estate where the Gesha varietal first gained international recognition and helped put Panamanian coffee on the world stage. A great example of how much expression can come from carefully controlled cold fermentation: complex and fruit-forward while keeping the clarity and definition expected of the world's best Geshas. In the cup: crown melon, honeysuckle, and yellow dragonfruit.
THE PRODUCER
The Jaramillo farm has conditions perfect for Gesha thanks to its naturally cold, wet air. The famous 2004 lot that reintroduced the world to the variety's high cup quality was grown here. The incredibly steep 40-degree incline and rolling hills make harvest extremely challenging, but well worth the effort, since many of the Peterson family's top-performing lots come from this farm. This lot was selected from a region of Jaramillo named "Bosque."
THE PROCESS
The cherries were first pre-dried for 2 days outdoors on raised beds, then fermented for 4 days in a stainless steel anaerobic tank inside a cold fermentation room. The coffee was finally dried in the estate's climate-controlled drying room for 41 days.
The cold, anaerobic four-day fermentation, followed by a long 41-day climate-controlled dry, is the defining combination. The precision of both stages is what builds the fruit-forward complexity while keeping the cup clear and defined.
THE CUP
Complex and fruit-forward: well-defined crown melon opens the cup, with layers of honeysuckle florals, then tropical yellow dragonfruit adding sweetness and acidity as it develops. A rare crown melon note runs through an impressive cup from start to finish.
