INTRO

From Isidro Orosco at Corral Pampa — situated at the foot of APU Choqesafra, the sacred mountain that gives the Inkawasi Valley its name, and a Cup of Excellence recognised farm whose volcanic soils, native shade tree ecology, and generational farming knowledge produce some of the most distinctive SL9 in Peru. Expressive without being loud, revealing its character in layers. In the cup: peach tea, rambutan, and rose water.

THE PRODUCER

Corral Pampa sits at the foot of APU Choqesafra — a mountain sacred and spiritually significant to the communities of the Inkawasi Valley — at 2,200 MASL on volcanic soils rich in nutrients and organic matter. The farm preserves rich native tree species and wild bird ecology, using the natural canopy to provide shade to the coffee trees in a system that has been maintained and refined over generations of farming. This traditionally washed SL9 is Isidro Orosco's showcase of what Corral Pampa's unique terroir — shaped by sacred mountain, volcanic soil, and the slow, cool maturation of extreme altitude — can achieve in the cup.

SL9 has become one of the most captivating discoveries in Peruvian specialty coffee. Genetically tested and found to closely resemble SL09 — a rare cultivar belonging to the Ethiopian Legacy group, originally identified through single-tree selections made by the Scott Agricultural Laboratories in the 1930s — it contains no Gesha in its genetic composition. Known colloquially as "Inca Gesha," the variety remains uncommon in cultivation and expresses a different side of its character in each farm and growing environment. At 2,200 MASL in Corral Pampa, the result is a layered, expressive, and deeply aromatic cup that rewards patience.

THE PROCESS

The Washed process at Corral Pampa involves:

🍒 Hand-picking — SL9 cherries selectively harvested at peak ripeness 💧 Flotation — Floated to remove defects before processing 🔧 De-pulping — Outer skin removed before fermentation 🧪 Fermentation — Beans fermented to break down remaining mucilage 💧 Washing — Thoroughly washed after fermentation to remove all residue ☀️ Raised-bed drying — Dried on raised beds to optimal moisture content

The traditional washed processing is the defining step — by stripping back all fruit influence and allowing the intrinsic character of the SL9 varietal and the extraordinary terroir of Corral Pampa to express themselves, the cup opens with a sweet peach clarity before citrus brings structure and, as it cools, a tropical rambutan softness emerges alongside a gentle rose water florality that ties everything together.
