Koppi is thrilled to present Guatemala — Finca Santa Elisa Geisha, an expressive and aromatic lot showcasing one of coffee’s most revered varieties. Grown on the fertile, volcanic slopes of Acatenango near San Pedro Yepocapa, this Geisha highlights both the terroir’s mineral intensity and the variety’s signature aromatic complexity.
Finca Santa Elisa has undergone significant development in recent years, transforming from modest production to a quality-driven estate. Koppi’s light roast approach preserves the coffee’s delicate aromatics and clarity, making this lot a standout filter brew for nuanced tasting.
THE PRODUCER — Josue Morales & Finca Santa Elisa
Located on the western slopes of the Acatenango and Fuego volcanoes, Finca Santa Elisa spans over 500 hectares with more than 300 hectares planted to coffee. Managed by producer Josue Morales, the estate balances scale with quality, employing careful farming and processing methods that elevate varietal character.
The volcanic soils and unique microclimate of this region — with warm days and cool nights — help develop dense, flavourful cherries that are ideal for specialty profiles like washed Geisha.
THE PROCESS — Clean Washed Clarity
This Geisha lot is processed using a traditional washed method, which emphasises purity, balance, and refined acidity:
🍒 Selective Hand Picking — Ripe cherries are harvested with care.
💧 Depulping & Fermentation — Cherries are washed and fermented to remove mucilage.
☀️ Drying — Beans are dried on patios and controlled beds to preserve clarity and brightness.
This process ensures a clean, articulate cup where nuanced aromatics and fruit notes are front and centre.

The body is light-to-medium with vibrant acidity and a lingering aromatic finish — a textbook example of washed Geisha’s finesse and Koppi’s precision roasting philosophy.
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
