Michela Estate, where this coffee was produced, showcases another side of Lérida's portfolio through distinctive varieties like SL28 — less commonly associated with Panama, but expressive here.
THE PROCESS This coffee is processed using Lérida's unique Waterfall Natural method — inspired by slowly fermenting cherries at low temperatures beneath cool, flowing waterfall water, controlling the pace of fermentation before the cherries dry naturally.
The cold waterfall fermentation is the defining step — it's what highlights SL28's bright, expressive fruit character while keeping the cup clean and elegant, building the passion fruit and pineapple intensity behind the soft, yogurt-like texture.
