Ilse presents a classic washed Pink Bourbon from San AgustĂn, Huila, produced by brothers Sebastian & German Hoyos. Known for its lifted acidity, floral undertones, and complex fruit structure, this Pink Bourbon is a textbook expression of the Huila profile — vibrant citrus, tea-like elegance, and soft stone fruit sweetness. A true filter standout, designed for clarity and balance.
The Producers:
Sebastian & German Hoyos are part of a younger generation of Colombian producers continuing the legacy of smallholder farming in Huila, one of the country’s most celebrated specialty coffee regions. Located near San AgustĂn, their farm is perched at high elevation, benefiting from cool nights and rich volcanic soils — perfect conditions for cultivating Pink Bourbon, a unique hybrid varietal known for both its cup quality and striking flavour definition.
The Process:
This lot is processed via the washed method, ensuring purity of flavour and varietal expression. Ripe cherries are hand-harvested, depulped, and fermented before being washed clean and dried under controlled conditions. The result is a refined and articulate cup, highlighting Pink Bourbon’s floral aromatics, juicy acidity, and elegant structure.
The Cup:
In the cup, expect a bright and composed experience. Blood orange 🍊 leads with a tangy-sweet acidity, followed by the delicate, structured body of black tea 🫖, and rounded out by a stone fruit 🍑 sweetness — think yellow peach or nectarine. What is the roast recency?
Ilse doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, Ilse typically roast light.
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
