INTRO From Ture Waji, founder of Sookoo Coffee and known as "The King of Guji" — a flavourful, impressively clean natural that's made him famous. Mixed berry jam and stone fruit lead, with lime leaf brightness and delicate florals throughout, and an abundance of sweetness. In the cup: mixed berries, lime leaf, and stone fruit.
THE PRODUCER Ture Waji is not only an outstanding producer but a passionate, kind individual, renowned for consistently producing some of Ethiopia's cleanest natural coffees. Cherries for this lot are gathered from 35 local smallholders at the Suke station, each managing small, roughly 1–2 hectare parcels entirely organically, with coffee planted in fully or semi-forested systems.
THE PROCESS Cherries are collected at peak ripeness, then sorted and moved directly to drying tables, where they dry on raised beds in cherry.
The straightforward, carefully sorted whole-cherry drying is the defining step — it's what preserves the impressive cleanliness Ture Waji is known for, letting the mixed berry and stone fruit sweetness come through without excess funk.
THE CUP Clean and sweet — mixed berry jam and stone fruit lead the cup, with lime leaf brightness and delicate florals woven throughout, and an abundance of natural sweetness.
