From the celebrated coffee-growing highlands of Cauca, Colombia, Finca El Sendero's Gesha is processed using a semi-washed method that teases out an exceptionally floral and fruit-forward profile. The result is a coffee of remarkable delicacy — rose-like aromatics mingling with the juicy sweetness of peach and the bright, citrus-bitter complexity of mandarinquat.
This is a coffee that speaks to the extraordinary potential of Cauca-grown Gesha when paired with a producer who understands how processing can unlock and amplify terroir.
THE PRODUCER
Eyder Erney Martinez Mosquera cultivates coffee on Finca El Sendero in Cauca, one of Colombia's most revered regions for specialty coffee. Situated at 1,800 MASL, the farm benefits from the cool, mist-laden mountain air and mineral-rich soils that define the best of Cauca's growing conditions.
Martinez Mosquera is a producer with deep roots in the land, approaching farming as both a craft and a calling. His commitment to quality at every stage — from cherry selection through to post-harvest processing — is reflected in the exceptional clarity and expressiveness of his lots.
THE PROCESS
The Semi-Washed process at Finca El Sendero involves:
- 🍒 Selective Harvest — Hand-picking of fully ripe Gesha cherries at peak sugar development
- 🔧 Pulping — The fruit skin is removed while mucilage is retained on the bean
- 🧪 Controlled Fermentation — Beans ferment with mucilage, developing floral aromatics and fruit complexity
- ☀️ Raised Bed Drying — Even, carefully managed drying on raised beds to preserve delicate aromatic compounds
The semi-washed method allows the natural sweetness and floral character of the Gesha variety to emerge with greater intensity than a fully washed process, whilst retaining the clarity and cleanliness of cup that the variety is celebrated for.
THE CUP
A luminous and floral Gesha with the signature perfumed quality of the variety elevated by the semi-washed process. Rose aromatics drift across the palate, supported by a soft, yielding peach sweetness and the bright, complex citrus of mandarinquat on the finish. What is the roast recency?
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6–12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 — should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
