INTRO
A new lot located in the centre (Centro) of Elida and partially located inside the Baru Volcano National Park. This process was fermented for 1 day in a RF then washed and sun-slow dried in raised beds.
THE PRODUCER
The Lamastus Family have established Elida Estate as one of Panama's most prestigious coffee farms, with their Centro Loma lot representing a special section located in the centre of the estate, partially inside the Baru Volcano National Park. Their innovative processing techniques, including the proprietary Reactor Fermenter (RF), demonstrate a commitment to pushing the boundaries of specialty coffee whilst respecting the extraordinary terroir of this renowned region.
Growing Gesha at elevations between 1780 and 1820 metres above sea level within the protected environment of the national park creates ideal conditions for developing the complex characteristics this variety is celebrated for.
THE PROCESS
The RF1D ASD Washed process at Elida Estate involves:
- 🍒 Cherry Selection — Careful picking at peak ripeness
- 🔬 RF Anaerobic Fermentation — 1 day in proprietary Reactor Fermenter
- 🔄 Constant Rotation — Sealed stainless-steel tank rotates constantly
- 💧 Even Distribution — Must evenly distributed over fruits
- 🚿 Washing — Post-fermentation washing
- ☀️ Raised Bed Drying — Sun-slow dried on raised beds
RF (Reactor Fermenter): Fermented anaerobically in a sealed stainless-steel tank that rotates constantly, evenly distributing the must over the fruits.
THE CUP
Floral, guava, and pomelo. A new lot from the centre of Elida Estate, partially located inside the Baru Volcano National Park. Fermented for 1 day in the Lamastus Family's proprietary Reactor Fermenter before washing and sun-slow drying. An innovative processing approach applied to one of Panama's most celebrated varieties in a pristine high-altitude environment.

What is the roast recency?
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
