A technically extraordinary Gesha from Pepe Jijón at Finca Soledad in Imbabura. The Wave Washed CF process is unlike anything conventional — and in the cup it shows: mangosteen, jasmine, and lulo in a layered, aromatic profile that feels both precise and alive.

Pepe Jijón farms Finca Soledad in Imbabura, one of Ecuador's emerging specialty coffee regions. His work sits at the intersection of agricultural precision and experimental processing — producing Gesha lots that push well beyond what the variety typically delivers.

THE PROCESS

The Wave process is built around temperature cycling — moving coffee between fermentation tanks and refrigerators in a controlled sequence that creates a sustained temperature wave from higher to lower, keeping the embryo alive throughout. The Gesha undergoes a three-day cherry fermentation, after which mosto — juice extracted from previous fermentations of freshly picked ripe cherries in a low-oxygen environment — is introduced during the final two days, once the pH has dropped naturally. The result is a layered, controlled fermentation that builds complexity without losing the integrity of the seed.
