INTRO From Oscar Hernandez's Nogales farm in Pitalito — a research-driven, biotechnology-focused expression of Yellow Bourbon. Orange blossom florality leads, with banana sweetness and a strawberry sorbet brightness rounding out the cup. In the cup: orange blossom, banana, and strawberry sorbet.
THE PRODUCER Oscar Hernandez, a third-generation producer, currently leads operations at Nogales. With a background in environmental management, he has transitioned the farm into a research-driven facility focused on biotechnology and sustainable farming practices, aimed at enhancing both coffee quality and community well-being.
THE PROCESS This lot uses a specialised anaerobic fermentation: after de-pulping, beans are placed in hermetic tanks with mosto — a pre-fermented liquid collected from previous batches, rich in native microorganisms. Fermentation is monitored at approximately 18°C to maintain stability. Once complete, the coffee is thoroughly rinsed and dried slowly on raised beds for 15 days, followed by a 30-day stabilisation period in GrainPro bags to ensure flavour consistency.
The mosto-inoculated fermentation, carefully temperature-controlled at 18°C, is the defining step — it's what builds the orange blossom and strawberry sorbet character that define this cup, while the extended GrainPro rest locks in consistency.
THE CUP Bright and aromatic — orange blossom florality up front, banana sweetness through the middle, and a strawberry sorbet finish. A precise, research-driven expression of Yellow Bourbon.
