Gout & Co is excited to present El Porvenir Tabi Washed, a finely balanced washed coffee from the mountainous Palestina district of Huila. Showcasing the often‑underappreciated Tabi variety, this lot combines crisp acidity and refined sweetness with clean structural clarity — making it a standout filter coffee that’s juicy yet elegant.
The Producer:
This lot comes from Finca El Porvenir, a coffee estate in Palestina, Huila — one of Colombia’s most respected specialty coffee micro‑regions. Farmers like Cecila Almonacid, Camilo Segura, Sandra Milena Mora, and Hector Coy steward the land with attention to detail and care, cultivating Tabi alongside other select varietals at high elevation and benefiting from rich volcanic soils and ideal climate conditions that favour slow cherry development.
The Process:
El Porvenir Tabi Washed is produced using a classic washed method to accentuate clarity and brightness. Ripe cherries are picked selectively, depulped soon after harvest, and then undergo a controlled fermentation to build clean acidity and sweetness before washing away mucilage. The beans are dried gently to preserve crisp fruit notes and structural nuance — a hallmark of excellent washed coffee from Huila.
The Cup:
In the cup, this coffee is bright, fresh, and layered. Lemongrass 🍋 provides a pleasant herbal lift up front, while sugarcane 🍬 sweetness underpins the mid‑palate with gentle approachable richness. Juicy green apple 🍏 adds crisp acidity, and a subtle herbal 🌿 aromatic frame rounds out a cup that is clean, refreshing, and wonderfully balanced — ideal for thoughtful filter brewing.

What is the roast recency?
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
