INTRO — A Rare Varietal from Colombia's Most Innovative Estate
Sudan Rume is one of specialty coffee's most elusive varieties—a genetic treasure originally discovered in Sudan's Boma Plateau, prized for its exceptional sweetness and complex fruit character. It's notoriously difficult to cultivate, which makes this lot from Granja La Esperanza all the more remarkable.
Las Margaritas Farm, part of the renowned Granja La Esperanza estate, has become synonymous with innovation in Colombian coffee. Managed by three generations of the Herrera family, this 34-hectare farm in the Penedonia mountain range has moved far beyond traditional washed processing, pioneering new varieties and methods that continue to set trends across the specialty coffee industry.
THE PRODUCER — Rigoberto Herrera & cGLE Las Margaritas
Las Margaritas sits adjacent to the famous Potosí Farm at approximately 1,800 metres above sea level in the Penedonia mountain range. Here, 34 hectares of coffee trees cling to steep hillsides, benefiting from the cool mountain air and rich volcanic soils that make Valle del Cauca one of Colombia's premier coffee-growing regions.
The farm is a multi-generational operation, with three generations of the Herrera family bringing their own ideas and innovations to coffee production. Rigoberto Herrera oversees operations, but the family's collective knowledge—spanning decades of experience—informs every decision, from varietal selection to processing protocols.
The estate's commitment to innovation can be traced back to the mid-2000s, when the team travelled to Panama to deepen their understanding of coffee processing and agronomy. Since then, they've become leaders in experimental processing and rare varietal cultivation, consistently producing coffees that push the boundaries of what's possible in Colombia.
THE PROCESS — Natural Processing for Maximum Fruit Expression
This Sudan Rume lot undergoes a natural process that allows the variety's exceptional fruit character to shine through. The approach is deceptively simple, but requires constant attention and perfect conditions:
· 🍒 Selective Cherry Picking — Only fully ripe cherries are harvested at peak sugar development
· ☀️ Whole Cherry Drying — Cherries are dried intact, allowing fruit sugars to infuse the beans

What is the roast recency?
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
