INTRO

From Joaquin Coaquira Lipa's Santa Juana farm in Puno — a full-bodied, layered, and beautifully executed washed Bourbon from a producer who has recently committed entirely to coffee as his family's primary livelihood. Bigger on the body, medium-plus sweetness, and a lightly sparkling acidity. In the cup: juicy Malbec grape, currant jam, and cacao, with pluot, blueberry, and a tropical perk running through.

THE PRODUCER

Joaquin Coaquira Lipa has gone all-in on coffee in recent years — making it his family's main source of income and dedicating his days to farm infrastructure, plant care, and the beehives that sit alongside his coffee plants at Santa Juana. His parents instilled in him a deep respect for ecosystem health, and the practice of tending beehives is an ancestral one at the farm — improving pollination of the coffee flowers, which in turn leads to a better fruiting and a more abundant harvest.

Bourbon is one of the most culturally and genetically important Arabica varieties in the world, forming the genetic foundation of a vast proportion of the coffees consumed in specialty coffee today. A tall variety with relatively low cherry production and excellent cup quality at altitude, it has been largely replaced in commercial farming by higher-yielding, more disease-resistant cultivars — making lots like this, from a producer committed to growing it properly at 2,000 MASL, genuinely valuable.

THE PROCESS

The Washed process at Santa Juana involves:

🍒 Selective hand-picking — Cherries harvested by hand, selecting only fully ripe cherries 💧 Washing & flotation — Washed to eliminate impurities, then floated to remove any defective cherries 🔧 Depulping — Outer skin removed before fermentation 🧪 Fermentation — Fermented for just over 24 hours until mucilage separates cleanly from the parchment 💧 Washing — Thoroughly washed after fermentation ☀️ Raised-bed drying — Dried on raised beds for several weeks until moisture content reaches an even 10.5%

The precise 24-hour fermentation is the defining step — long enough to develop the deep, layered fruit character and structured sweetness that define this Bourbon, but controlled carefully enough to preserve the clean, well-rounded body and lightly sparkling acidity that make it so compelling.

THE CUP

A full-bodied and beautifully layered washed Bourbon from one of Puno's most committed and ecosystem-conscious producers — juicy Malbec grape and currant jam up front, deepening into blueberry and pluot, with a warm cacao finish and a tropical brightness that keeps the cup alive from first sip to last.
