This washed lot from Guji captures the elegance of Ethiopian coffee at its finest—clean, vibrant, and structured. Expect a lifted floral character with notes of juicy peach and bright bergamot, underpinned by the clarity and freshness typical of high-elevation washed processing.

Coffee has deep roots in Guji, where wild Arabica grows natively in forested highlands. Historically grouped under Sidama, Guji was recognised as a distinct origin in the early 2000s to better represent its unique cup profiles and improve traceability. Today, the region is known for producing some of Ethiopia’s most expressive and sought-after coffees.

Shonora Coffee, founded in 2018 by brothers Adugna and Morkata Shonora, builds on a family legacy dating back to 1988. Their father, Shonora Gata, began trading coffee alongside gold, establishing wet and dry mills across Guji by the late '90s. Now in its second generation, the family works with over 150 smallholder farmers, cultivating coffee organically under forest canopy. No chemical fertilisers are used—only natural compost from fallen shade leaves, enriching the already fertile highland soils.

This lot reflects both heritage and innovation, delivering a refined cup that honours Guji’s land, people, and long-standing coffee culture.

Flavour Notes: Floral, Peach, Bergamot, Tea-Like

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
