El Injerto, a stunning farm in Guatemala, renowned for its impressive Cup of Excellence rankings. It's hard to believe you're not drinking a Kenyan coffee when the flavour markers are so similar.


THE PRODUCER

Finca El Injerto, owned by the Aguirre family, has become one of Guatemala's most celebrated coffee estates. Located in the remote highlands of Huehuetenango, the farm has won numerous Cup of Excellence awards and is known for its innovative approach to varietal selection and processing.

The cultivation of SL-28 at El Injerto demonstrates the farm's commitment to exploring how Kenyan varietals express themselves in Guatemalan terroir—with remarkable results.


THE PROCESS

The Washed process at Finca El Injerto involves:

  • 🍒 Harvest — Careful hand-picking of ripe cherries
  • 🔧 Depulping — Same-day processing after harvest
  • 🧪 Fermentation — Controlled underwater fermentation
  • 💧 Washing — Channel washing to remove mucilage
  • ☀️ Drying — Sun-dried on patios and raised beds

The washed process allows the Kenyan SL-28 varietal characteristics to shine through with exceptional clarity.


THE CUP

When hot, the cup is dominated by blackcurrant, with a slightly jammy character. As it cools, the acidity becomes more pronounced, evolving into a vibrant cranberry note. The finish shifts toward a fresher, more floral expression, with hints of hibiscus and orange. It's truly fascinating to taste how SL-28 expresses itself in a different terroir.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
