INTRO

Datura's El Injerto Ethiopian Landrace is a vivid, florally expressive washed coffee from one of Guatemala's most celebrated and decorated estates. Grown at the highest sections of the farm in mineral-rich, non-volcanic soil, these Ethiopian landrace varietals produce a cup that sits somewhere between the delicacy of a washed Ethiopian and the clarity of a highland Guatemalan — intensely aromatic, deeply floral, and remarkably clean.


THE PRODUCER

Founded in 1874 by Jesús Aguirre Panamá and today managed by the third and fourth generations of the Aguirre family, Finca El Injerto is considered Guatemala's most awarded coffee estate. Located in the highlands of Huehuetenango, near the Sierra de los Cuchumatanes, the farm ranges from 1,500 to 1,920 MASL across rugged and remote terrain — conditions that produce extraordinary coffee with slow, even cherry maturation and concentrated complexity.

El Injerto has achieved an unmatched record of eight first-place wins at the Cup of Excellence, and in 2012 set a world record for the highest price ever paid for competition green coffee at the time. Rainforest Alliance and Carbon Neutral certified, the farm is as committed to sustainability as it is to quality, preserving more than half its land as protected forest — the largest private forest reserve in Huehuetenango. The estate also provides on-site healthcare, housing, and schooling for its workers and their families.

The Ethiopian landrace section represents El Injerto's ongoing spirit of varietal experimentation and exploration, planting rare seeds to unlock flavour profiles that bridge continents.


THE PROCESS

The Washed process at Finca El Injerto involves:

  • 🍒 Selective Harvest — Only fully ripe cherries are hand-picked
  • Flotation & Sorting — Defective beans removed in water tanks
  • 🔧 Depulping — Skin and pulp mechanically removed
  • 🧪 Fermentation — Natural cold fermentation in tanks
  • 💧 Washing & Soaking — Washed clean, then soaked for 24 hours
  • ☀️ Drying — Slow-dried on raised African beds in a greenhouse under shade

This exhaustive process — which El Injerto calls their 'Peak Performance Process' — emphasises precision and extends the drying phase to enhance clarity, sweetness, and longevity in the cup.


THE CUP

A vivid and expressive cup that opens with bright, zesty grapefruit before giving way to a warm honeyed sweetness. Ginger adds a gentle spiced lift to the mid-palate, whilst soft florals linger in the finish — elegant and quietly complex.
