THE PRODUCER Elto Coffee is the vision of Eliyas Dukamo and Atiklit Dejene, a couple from Sidama Bensa driven by a deep passion for coffee. Their project is dedicated to showcasing the full richness of Ethiopian terroirs through exclusive nano-lots of remarkable clarity and complexity. Working hand in hand with smallholder farmers from surrounding communities, they carefully select the ripest cherries and transform them with rare precision, blending traditional knowledge with contemporary innovation — treating each lot as a canvas where washed, natural, and honey methods are reimagined to highlight Sidama's singular terroir.

THE PROCESS This lot is processed as an Anaerobic Washed — cherries undergo anaerobic fermentation before a washed finish, building aromatic complexity while removing the fruit ahead of drying for a cleaner, more transparent cup.
The anaerobic fermentation ahead of washing is the defining step — it's what builds the verbena and kaffir lime aromatic complexity that define this cup, while the washed finish keeps the nectarine and grapefruit character clean and precise.
