This microlot thrives at around 1,800 meters above sea level, where cool mountain air and slow cherry development yield extraordinary clarity and sweetness in the cup.

This lot is produced by Miguel Bohórquez, farming at Finca El Triunfo, a high-altitude estate in Huila renowned for consistency and quality. In collaboration with DAK, Miguel’s work showcases how classic Colombian washed coffees can combine clarity, sweetness, and aromatic finesse — a tribute to both farm stewardship and specialty coffee craftsmanship.

THE PROCESS — Clean Washed Clarity

The Royal Gala lot undergoes a traditional washed process, designed to highlight structure, brightness, and purity of fruit characteristics:

🍒 Selective Picking — Only ripe cherries are harvested by hand
💧 Depulping & Fermentation — Pulp is removed and beans are fermented to clean away mucilage
☀️ Drying — Beans are evenly dried to lock in sweetness and clarity

This approach yields a clean, transparent cup where varietal nuances shine through without overshadowing balance and drinkability.
