INTRO

Maple Honey is a washed field blend community lot from multiple producers across Colombia. Smooth, bright, and balanced, it makes a very approachable espresso — the kind of cup you can pull every day and never tire of. Expect honey blossom sweetness, juicy mandarine, and the gentle warmth of brown sugar.

THE PRODUCER

Maple Honey is a community lot, drawing from multiple smallholder producers across Colombia. Community lots like this allow DAK to work with a broader network of farmers, combining their harvests into a cohesive and consistently expressive blend. The field blend varietal composition reflects the diversity of cultivars grown across these farms, processed uniformly through the washed method to achieve a clean, bright, and balanced result.

THE PROCESS

The Washed process involves:

  • 🍒 Selective Harvest — Ripe cherries hand-picked by each contributing producer
  • 🔧 Depulping — Skins and fruit removed mechanically
  • 💧 Fermentation & Washing — Mucilage removed through water fermentation and washing channels
  • ☀️ Raised-Bed Drying — Parchment dried slowly on raised beds
  • ✅ Sorting — Quality sorted before milling and export

The washed process delivers the clean, transparent cup that allows this field blend's natural honey sweetness and bright citrus character to come through clearly.

THE CUP

Smooth, bright, and beautifully balanced — Maple Honey is an espresso that delivers every time. Honey blossom sweetness leads, with juicy mandarine acidity and a finish of warm brown sugar. A community lot that punches well above its weight.

Coffee Variety

About this variety

This is a mixed or locally selected coffee population rather than one precisely identified variety. Expect the lot’s tasting notes to be more useful than a single variety stereotype.

This lot does not yet include specific tasting notes. The roaster’s description and lot details are more useful than a single-variety profile.

A little background

Several plant types may be growing and harvested together, often reflecting a farm or region’s planting history.

Classification Mixed population

Technical lineage The individual plants are not fully separated or identified, so a single genetic lineage would be misleading.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
