INTRO

This coffee comes from the Cusco region of Peru, produced by the Cedrobamba Collective. Cherries are harvested from August to October at elevations between 1,800 and 2,100 metres, where volcanic soils and cool afternoon breezes slow cherry maturation and help develop deeper sweetness. In the cup we find dark plum, hazelnut, and raisins with a silky texture and a wine-gum sweetness. A rich, comforting natural that showcases Peru's distinctive terroir.

THE PRODUCER

The Cedrobamba Collective operates in the Cusco region of Peru, bringing together smallholder farmers who cultivate coffee at high altitudes. The region's volcanic soils provide excellent nutrition for coffee plants, whilst cool afternoon breezes create ideal growing conditions that slow cherry maturation. This extended development period allows sugars to concentrate and complex flavours to emerge. The collective model enables small-scale farmers to pool resources, share knowledge, and achieve better quality outcomes through coordinated harvesting and processing.

THE PROCESS

The Natural process at Cedrobamba involves careful handling of whole cherries:

• 🌬️ Cool Climate — Slow drying aided by cool afternoon breezes
