INTRO
Another beautiful natural Typica from direct partner Hacienda Pillcocaja — honeydew and dark berries with a creamy mouthfeel and abundant sweetness. In the cup: honeydew, maple syrup, and cookies.
THE PRODUCER
The Crespo family acquired the Pillcocaja property 12 years ago to produce coffee, guided by innovation and a quest for perfection. Cherries are harvested and processed in a wet mill located 800 meters from the farm, ensuring perfect freshness, using water sourced from a nearby well.
THE PROCESS
Cherries are pulped and fermented for 18 hours, then dried on African beds under 70% shade for 12 days.
The 70% shade cover during the 12-day drying period is the defining step — it's what builds the creamy, dark berry sweetness behind the honeydew and cookie-like character that define this cup.
THE CUP
Creamy and sweet — honeydew melon leads, with dark berry depth and a maple syrup richness, finishing on a cookie-like sweetness.
