Happy to release this expressive and (the right amount of boozy) coffee from Aquiares Estate in Costa Rica. The Centroamericano varietal is a hybrid between a Sarchimor T5296 and Sudan Rume, processed and dried as an anaerobic natural.
THE PRODUCER
Diego Robelo farms Centroamericano at Aquiares Estate, situated at 1200 metres above sea level in Turrialba, Costa Rica. The Centroamericano varietal itself is a deliberate hybrid, crossing the disease-resistant Sarchimor T-5296 with the flavourful Ethiopian Sudan Rume lineage—bringing together resilience and cup quality potential in one tree.
THE PROCESS
The Anaerobic Natural process at Aquiares Estate involves:
🍒 Cherry Selection — Careful picking at peak ripeness
🔒 Anaerobic Fermentation — Sealed, oxygen-restricted fermentation
☀️ Natural Drying — Whole cherries dried with fruit intact
The result is a textured and layered coffee, syrupy in body, with the anaerobic fermentation drawing out a distinctly boozy, liqueur-like complexity.
