THE PRODUCER
Takesi, led by Mariana Iturralde, produces some of the world's best coffee, built on exceptional quality and a distinctive sense of terroir. This harvest marks a decade since the very first direct purchase from Mariana — ten years that have grown into a strong, proud partnership. Everyone at Takesi works across all stages of production, from picking to drying, rather than being confined to one part of the process, giving the whole team a shared stake in the coffee's quality and a level of consistency difficult to achieve when responsibilities are more divided. Takesi sits at one of the highest elevations in the world for coffee production — cool temperatures and volcanic soil slow ripening, building intensity and clarity in every cherry.
THE PROCESS
Takesi uses the same washed process across nearly all of its coffees, removing the fruit before fermentation and drying to let each variety's natural character shine. This lot is one of the exceptions the process is standard for — unlike maragogype, whose larger bean size demands adjusted mucilage removal and fermentation time, Java follows the estate's typical washed protocol.

Lightly elegant — bergamot and rosehip aromatics lead, with a mandarin sweetness rounding out the finish.
