From the Vergara brothers' Peñas Blancas community project in Huila — a profile fermented Gesha of exceptional aromatic complexity. THE PRODUCER

Jhoan and Diego Vergara built their reputation through Finca Las Flores, which has become one of Huila's most respected addresses for experimentally processed micro-lots. Following that success, the brothers expanded their work to support neighbouring smallholder farmers through Peñas Blancas — a community processing project and hub where deep fermentation expertise and precision infrastructure are made available to the surrounding farming community. The focus on fermentation mastery runs through everything that emerges from this project, enabling neighbouring producers to access next-level quality processing and more equitable market pricing.

Gesha, originating from the Gesha forest of southwestern Ethiopia, is widely regarded as one of the world's most prized coffee varietals. At 1,750 MASL in Huila — one of Colombia's finest growing regions — the variety's signature florality and aromatic complexity find ideal conditions to express themselves fully.

THE PROCESS

The Profile Fermented process at Peñas Blancas involves:
