INTRO
Expressive and tropical, novel and exciting: a coffee that champions both Gesha and processing as a frontier. For anyone longing for the extension of summer, it brings guava, mango, orange creamsicle, and pink bubblegum, as if every flavour we love about summer clung to the season in this cup. In the cup: guava, mango, orange creamsicle, and pink bubblegum.
THE PRODUCER
Franky Stiven Hoyos is a third-generation farmer from Huila and one of the many young, multi-generational producers in Colombia pushing the boundaries of processing and flavour. His grandfather began by planting mixed crops on El Encanto, and his father was the first to plant coffee on ten of its 45 hectares. Franky cut his teeth learning barista, roasting, and sensory skills, and now pairs those with inherited farming wisdom and experimental processing. He farms sustainably, pursues quality relentlessly, and is refreshingly transparent about his processing protocols.
THE PROCESS
After being handpicked at peak ripeness, whole cherries are floated to remove lower-density beans and undergo an initial oxidative fermentation of 38 hours. They are then rinsed, sanitised, and pulped. The parchment goes into open 210-litre tanks and warms for 6 hours before a thermal shock protocol "opens the pores" in anticipation of inoculation with orange extract and red fruit yeast. After inoculation, the coffee ferments another 38 hours submerged in water, is thoroughly rinsed, then spread to dry in the sun for 12 hours, with drying completed in mechanical dryers for a further 28 hours.
The thermal shock followed by orange extract and red fruit yeast inoculation is the defining step. It's what builds the guava, mango, and creamsicle character, with Gesha's expressiveness on top.
THE CUP
Expressive, tropical, and summery: guava and mango lead, with orange creamsicle sweetness and a pink bubblegum finish.
