INTRO Grown by Diego Horta on his farm in Santa María and shipped to the processing gurus at La Palma y El Tucán — a partnership between a beneficiary of Equation Coffee's community programs and the pioneers of Colombian anaerobic processing. Pronounced red fruit notes lead, reminiscent of black cherries and almost grape-like, with a boozy-sweet cherry cordial character and a marzipan-smooth creaminess. In the cup: black cherry, cherry cordial, marzipan, spiced orange, and craft chocolate.

THE PRODUCER Equation Coffee — the team behind La Palma y El Tucán — pioneered anaerobic processing methods in Colombia and has produced some of the finest anaerobic washed coffees around, driven by an obsession with perfecting fermentation. Since 2013, they've fostered meaningful relationships with over 100 coffee-growing families surrounding their production facility through relationship-driven programmes like Neighbors & Crops. Diego Horta is one such beneficiary — this lot grown on his farm in Santa María before being shipped to La Palma's processing facility in Cundinamarca.

THE PROCESS After being picked at peak ripeness, cherries are transported to the La Palma processing facility in Cundinamarca, where they undergo 190 hours of anaerobic fermentation in GrainPro bags. Drying then begins in mechanical dryers for 24 hours, before finishing in a coffee drying shed over roughly eight more days, until optimal moisture content is achieved.

The extended 190-hour anaerobic fermentation is the defining step — it's what builds the pronounced, grape-like black cherry intensity and boozy cherry cordial sweetness that define this cup.

THE CUP Pronounced and profound — black cherry and grape-like red fruit up front, boozy yet sweet like cherry cordial filling, with a smooth, creamy marzipan sweetness. Citrus notes play against a cinnamon-like spice for a spiced orange character, finishing like craft chocolate as it cools.
