A debut lot of the rare Marshell varietal from David Flores at the El Morito estate in Cajamarca — the third consecutive year of direct trade between Apollon's Gold and this exceptional Peruvian farm. A Bourbon mutation of remarkable complexity, this washed Marshell delivers the vibrant intensity more often associated with natural-process coffees, while retaining the crystalline clarity that only meticulous washed processing can achieve. In the cup: vibrant longan sweetness, tart passionfruit, and a playful strawberry bubblegum finish.
THE PRODUCER
El Morito is David Flores' estate in Cajamarca, a high-altitude growing region in northern Peru where extreme elevation, cool temperatures, and slow cherry development produce beans of exceptional density and cup clarity. Apollon's Gold's direct trade relationship with the farm began in the 2024–2025 season, with previous selections highlighting Geisha and Yellow Caturra. The El Mango plot, home to this Marshell lot, represents a new chapter in the partnership — and a landmark expression of what this farm is capable of at its most ambitious.
The Marshell varietal is a rare Bourbon mutation, prized for its structural complexity and remarkable sweetness. It is exceptionally uncommon to find it processed to this level of precision, and this lot — combining the varietal's inherent intensity with the purity of a washed process — is considered a pinnacle of the estate's output.
THE PROCESS
The Washed process at El Mango involves:
🍒 Hand-picking — Cherries selectively harvested at peak ripeness 💧 Flotation sorting — Low-density cherries removed before pulping 🔧 Depulping — Outer fruit skin removed from the bean 🧪 Fermentation — Beans fermented to break down remaining mucilage 💦 Washing — Thoroughly washed to remove all fermentation residue ☀️ Drying — Dried to optimal moisture content, preserving structure and clarity
