INTRO — A Balanced Classic from Brazil

AMOC (A Matter of Concrete) is excited to bring you Brazil — /001³ São Domingos, a wonderfully balanced coffee that embodies the sweetness and smoothness Brazil is known for, with nuanced complexity that keeps every sip engaging. Sourced from Fazenda São Domingos in Mococa, São Paulo, this lot offers a classic yet refined profile that works beautifully in both filter and espresso preparations.

At AMOC, coffee isn’t just about flavour — it’s about purposeful choices and rigorous selection. This lot exemplifies their commitment to showcasing coffees that are true to origin yet expressive and enjoyable, every time.

THE PRODUCER — Fazenda São Domingos

Fazenda São Domingos sits in the verdant highlands of Mococa, where tradition meets thoughtful innovation. Owned and managed by Marco A. Guardabaxo, the farm blends historic expertise with modern precision. The estate has invested in both wet and dry milling technologies, enabling careful control over every step of production — from harvest to drying — to ensure pristine quality in the cup.

This thoughtful approach allows São Domingos to produce beans that carry Brazil’s hallmark sweetness, yet feel lively, layered, and complete.

THE PROCESS — Pulped Natural Clarity

The /001³ lot is processed as pulped natural, a method that enhances sweetness and body while preserving structural clarity:

🍒 Selective Harvesting — Only ripe cherries are picked at peak maturity.
💧 Depulping Before Drying — Pulp is removed, leaving just enough fruit to contribute sweetness without muddiness.
☀️ Sensor-Controlled Drying — Drying systems closely monitor temperature for consistent development.
🔄 Even Development — Sensors and meticulous timing help lock in balanced flavours.

This hybrid method delivers the best of both washed and natural worlds: sweetness and body, with striking cleanliness.

THE CUP — Smooth, Sweet, and Comforting

In the cup, /001³ São Domingos delivers rich, comforting flavours with a polished, approachable finish — perfect for daily brewing or special moments alike.

Flavour Notes

🍫 Milk Chocolate — smooth, familiar cocoa sweetness
🌰 Roasted Nuts — warm nutty richness with depth
🍯 Caramel — soft, golden sugar sweetness
🍞 Toasted Bread — gentle toasty note rounding out the profile

This coffee balances sugar, sweetness, and body beautifully. It’s a versatile everyday favourite with enough nuance to reward careful brewing — a testament to AMOC’s thoughtful curation and the terroir of Mococa.

AMOC Coffees are beautifully displayed and delivered in a lightweight, fully recyclable PET jar. This jar can be reused as you wish!

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.

About this variety

Acaiá can make a comforting, rounded cup, especially in Brazilian lots with natural or pulped-natural processing. The reviewed coffee leans into milk chocolate, roasted nuts, caramel and toasted bread. Those flavours are useful guidance for this lot, while farm, process and roast remain more decisive than the variety name alone.

Why this one is different
  • Brazil
  • Mococa, São Paulo
  • Natural

This Brazilian Acaiá is a mellow, comforting expression, with milk chocolate, roasted nuts, caramel and toasted bread in the roaster's notes. Its natural or pulped-natural handling supports the rounded sweetness and body. Another Acaiá from a different farm or process could be considerably brighter or lighter.

Natural processing often brings a rounder, fruit-led expression, which can make the same variety feel quite different from a washed lot.

A little background

Acaiá was selected in Brazil from Mundo Novo material and has been adapted to Brazilian growing regions. The São Domingos lot gives the broad variety history a specific farm and process context.

Identification note Acaiá includes several Brazilian IAC lines, and this listing does not supply the exact line. The flavour description therefore follows the individual lot rather than assigning one profile to the whole group.

Classification Brazilian Mundo Novo selection group

Technical lineage A Brazilian selection group derived from Mundo Novo.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
