About This Coffee
Full of energy and character, this special edition from El Diviso is a coffee that captures joy in every sip. Sweet, vibrant, and refreshingly unique, it blends apple-like fruitiness with a silky milk chocolate texture, creating a cup that is both lively and elegant.

At 1,850 metres above sea level in Pitalito, Huila, producer Nestor Lasso continues to redefine the boundaries of coffee innovation. His Red Bourbon thrives in this high-altitude microclimate, where cooler temperatures allow cherries to ripen slowly, developing layered sweetness and balanced acidity.

The anaerobic natural process used here enhances complexity: ripe cherries are fermented in sealed tanks with limited oxygen for an extended period, allowing fruit esters and sugars to intensify. After fermentation, the cherries are sun-dried, locking in the distinctive bubblegum sweetness and chocolatey depth that make this lot unforgettable.

The result is a bright yet creamy cupfresh like green apple, sweet like candy, and smooth like milk chocolate — a truly playful and irresistible Colombian coffee that celebrates both innovation and craftsmanship.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
